Sweet Potato Pie (Directly out of book)
One pound of sweet potatoes, finely mashed, two cups sugar, one cup cream, one half cup butter, three well-beaten eggs, flavour with lemon or nutmeg and bake in pastry shell. Fine.
Julie's notes: One largish sweet potato, roasted or microwaved or peeled, chopped and boiled; peel and mash with a potato masher. I thought this seemed a little sweet, and I assume that their tea cups were likely closer to 3/4 cup than a full cup, so I used only 1 1/2 cups (I think you could even go to 1 cup, and brown sugar would be good, too). Bake in a pastry shell at 350F for about 1 hour, until puffed and set but still slightly jiggly in the middle.
