My mom has been down here twice since then and has asked me when I thought I should throw them out. i want to make this pizza recipe (scroll down a bit) but i'm having some difficulty understanding her directions to make pizza. i've never made pizza before. specifically when she says "To make crust: Sprinkle yeast over the surface of the warm water" (is the warm water supposed to be in a bowl or plate or what) and "Gently fold dough in quarters and transfer to pizza pan" (so you roll out the dough to 12 inches and then fold into quarters and then roll out again?)also, how long does it take for the dough to rise?any general tips/advice you can give me on making pizza is much appreciated!thanks, sara

For those of you who have cooked with asian herbs, I have a question!At our final farmer's market a few weeks back, I bought a bunch of this mysterious herb. It was next to the cilantro, and looked a little like basil, but smelled like something out of a Thai restaurant. The leaves are less shiny and pointier than basil, and have a darker color in the middle of the leaves (almost like a bad spot, but it was on every leaf even when fresh) in addition to a purplish stem. Their flavor is a little soapy, like cilantro, but also rather citrusy, and reminded me of Thai food - like tom yum, or some sort of Thai curry. I've used it in pho and in a stir fry, with good results.I've looked up common Thai herbs, but none of the pictures quite match, and the descriptions don't really get into what the herbs actually taste like! Can anyone enlighten me as to what this mysterious and tasty herb is by name?
