I wanted to bake a lovely layer cake that folks at the Fall Festival would be excited to win in the cake walk; hope I succeeded!This is Barefoot Contessa's Carrot Pineapple Cake. It was really moist and delicious, with hunks of walnut, raisin, carrot, and pineapple throughout. I used buttercream on the Festival cake, since it wouldn't be refrigerated, but went with the traditional decadent cream cheese frosting on our version.
( recipe and photos )09:24 pm November 1st, 2009corvidophileThese are a great quick recipe if you need a cinnamon bun fix, but don't have alot of time. No rising needed! Not as tasty as the labour intensive ones of course, but will definitely do in a pinch.
BUN MIX
1 tablespoons white sugar
1 teaspoon cinnamon
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons cold unsalted butter
1 large egg
1/4 cup milk
3 1/2 tablespoons confectioners' sugar
1 teaspoon water
Preheat oven to 375°F. Sift together flour, sugar, baking powder, and salt. Cut butter into small pieces and with your fingertips (or a pastry blender) blend into flour mixture until mix resembles coarse meal. In small bowl whisk together egg and 3 tablespoons milk and add to flour mixture, stirring until just combined. (I found I had to a touch more milk to bring it all together.)
Transfer mixture to a lightly floured surface and gently knead, 3 or 4 times, until it forms a dough. Roll dough into an approximate 10 by 6 inch rectangle.
INSIDE FILLING
3/4 c brown sugar
1 tbs cinnamon
1/4 c melted butter
walnuts or pecans
Note you can do the filling 2 ways, brush the butter on and then mix the sugar and cinnamon and sprinkle on. OR combine first 3 ingredients together, mixing well and spread like a paste all over. Both ways work fine. Sprinkle with pecans or walnuts.
Pam spray a 8" deep round dish.
Roll together so forms long tube, cut into about 6 pieces.
GOO LAYER
3/4 c melted butter (45 seconds in a microwave works great)
3/4 c brown sugar
1/2 tbs cinnamon
Whisk until thoroughly blended.
Pour half of the mix into the pam sprayed pan. Place the pieces into pan, cut side up. They will look ridiculously small, but they do puff up!
Pour remaining half of Goo Mix on top. Sprinkle with more pecans.
Bake buns in middle of oven until pale golden and cooked through, about 18 minutes.10:00 pm November 1st, 2009bloggingsaranow that halloween is over, i'm gonna buy one pumpkin on sale and roast pumpkin seeds and make pumpkin soup. does anyone have any good and simple recipes for pumpkin soup? not too many ingredients please.
